Omelette in your Halogen oven

Ingredients
2 eggs
30 ml (1fl oz) milk
Salt & pepper
Cuisine: Cooking time: 10 mins Serving: 1 people

Method

Whisk eggs, milk, salt & pepper in a small bowl. Pour mixture into a greased dish (or Halogen Oven Frying Pan). Cook in Halogen Oven at 240°C/464°C on the lower rack, stirring after a few mins.

Watch the mixture cook, leaving till top surface is set, then flip over and cook till base is done, remove from pan then fold over.
Enjoy!

Sausages with Cheese & Bacon

Ingredients
1lb pork sausages (beef works too)
4-8 bacon rashers
2 tbsp chutney or Branstone pickle
Cheese slices (thin sandwich ones)
Cuisine: Cooking time: 15 mins Serving: / people

Set your halogen oven at 190c – Low rack

Grill sausages until golden brown,
Make a slit 1/2 way through each sausage length ways,
Put a slice of cheese in each slit,
Add 1 teaspoon of chutney or pickle in between cheese slices. Now wrap bacon round each sausage.

Now put the sausages back onto rack & cook until bacon is crispy & the cheese has melted, turning half way through will crisp both sides. The Halogen Oven Skewers & Frying Pan is perfect to use with this meal. Especially the skewers. More info here.

Shortcake

Ingredients
110g Self raising flour
30g caster sugar
30g butter
75ml milk

Sift flour add sugar and combine well.
Cuisine: Cooking time: 40 mins Serving: 6-8 pieces / people

Method

Add butter and work until it looks like bread crumbs.
Add milk a little at a time until you have a soft but not wet dough
On a floured surface roll out to about 4-5mm thick. You make one big round or biscuits prick the top with a fork.

Preheat oven using ovens own preheat setting
Set temperature to 210c
Cook shortcake on browning tray for 10-12 mins until just golden
Turn out to cool.

Makes 6-8 depending on size
to alter this to coconut shortcake

increase
sugar to 50g
flour 175g self raising
50g desiccated coconut
butter 110g

Cream sugar and butter
add flour and coconut combine into a dough
roll out cook at 180 (no preheating for this one)
cook for 30 mins

Simple Pasta Bolognese

Ingredients
500g/17.6oz lean steak mince garlic clove crushed 2 beef oxo cubes 1 pepper chopped 1 onion or one leek chopped salt jar of bolognese pepper spaghetti
Cuisine: Cooking time: 7 mins Serving: 4 people

Method

Preheat the halogen oven to 240°C (464°F) for a couple of minutes.

Put in all of the ingredients apart from the spaghetti and bolognese.
Set dial for 7 minutes and blast on 240°C (464°F), stirring occasionally until mince has browned.

Add spaghetti (broken in half) and jar of bolognese. Ensure spaghetti is mixed in with mince and covered by sauce. Cover with lid and set temperature to 200°C (392°F) for 10 mins.

Whole Stuffed Fish Roasted with Almonds

Ingredients
100g/3 ½ oz mushrooms
2 tbsp sunflower oil
Large handful of spinach leaves
Small bunch of dill
1 lime
Freshly milled black pepper
Large whole fish, such as sea bass or salmon, gutted, about 900g/200lb
55g/2 oz flaked almonds

Method

Mushroom, spinach and dill is my choice of stuffing, but try breadcrumbs, fennel and watercress leaves for a change. You will need a large roasting tin which fits in your oven.

1.Remove the lid from the halogen oven, place the low rack inside the oven and replace the lid. Preheat the halogen oven to 200°C (392°F).

2.Prepare the stuffing: finely chop the mushrooms and put into the roasting tray with 1 tbsp of the oil. Put into the hot oven and cook for 6-8 minutes until the mushrooms are beginning to sizzle. Remove from the oven and spoon the mushrooms into a bowl.

3.Thinly shred the spinach leaves and dill. Grate the rind from the lime, cut in half and squeeze out the juice. Stir them all into the bowl or mushrooms and add a little black pepper.

4.Spoon the stuffing into the body cavity of the fish. Carefully lift the fish into the roasting tin. Make three or four diagonal cuts on the side of the fish, drizzle over the remaining oil and scatter over the almonds.

5.Cover and cook in the hot oven for 40-55 minutes until piping hot and cooked through, but start looking to see if it is cooked from 35 minutes onwards. (The time will depend on the thickness of the fish.) Remove the cover for the last 15 minutes.

Cottage Pie/Shepherd’s Pie

Ingredients
Fresh mince beef or lamb (depends on how many you’re feeding for quantity) Veg or olive oil 1-2 onions chopped 1-2 carrots sliced 110g (4oz) mushrooms sliced celery chopped bacon (optional diced) Worcester sauce beef stock salt & pepper herbs of choice (thyme, mixed herbs etc) 450-900g (1-2lbs) cooked smashed potato
Cuisine: Cooking time: 35 mins Serving: 3 people

Method

Fry onions and other veg, remove from pan and keep warm. Fry meat. Return veg to browned meat, add stock, cook on low heat for 10-15 mins. Meanwhile boil potatoes till soft mash with a little butter and pepper. Drain meat, save stock to make gravy, place into a suitable pie dish cover with the potato, place in Halogen Oven on low rack at 180-200°C (355-390°F) for approx 20-25 mins or until top brown. During cooking time thicken gravy with cornflour and cook veg of choice.

Chocolate and Raspberry Delight

Ingredients
2 medium eggs
115g/4 oz caster sugar
25g/1 oz butter, melted
125g/4½ oz dark chocolate with about 70% cocoa solids, melted
2 tbsp milk
25g/1 oz plain flour
1 tbsp cocoa powder
2 tbsp icing sugar
350g/12 oz raspberries

Method

A dense, dark rich chocolate cake or torte made with very little flour. You will need a greased base-lined 18cm/7 inch cake tin which fits in your oven.

1. Remove the lid from the halogen oven, place the low rack inside the oven and replace the lid. Preheat the halogen oven to 180°C (356°F).

2. Separate the eggs, putting the yolks into a mixing bowl and the whites into a grease-free bowl.

3. Pour the sugar over the egg yolks and whisk until light and fluffy. Stir in the butter, chocolate and the milk.

4. Sieve the flour and cocoa into the bowl and gently stir until mixed.

5. Whisk the egg whites until like soft peaks and with a metal spoon carefully fold into the chocolate mixture. Spoon the mixture into the cake tin.

6. Put into the hot oven and cook for 20-25 minutes until cooked through. Serve warm or cold.

7. Sieve the icing sugar into a small bowl and then press half of the raspberries through the sieve. Mix to a smooth purée.

8. Serve slices of the chocolate cake dusted with icing sugar, drizzled with purée and top each portion with whole raspberries.

Dumplings Halogen oven recipes!

Ingredients
75g (3oz) plain flour
75g (3oz) wholemeal flour
2 tsp baking powder

1lb (454g) ground beef or lamb

3 tbsp dried breadcrumbs
2 tbsp chopped chives
1 tsp poppy seed
1 egg
150ml (1/4 pint) milk
Cuisine: Cooking time: 15 mins Serving: 2 people

This is a fantastic recipe for cooking dumplings in your Halogen oven. If you want to change it up a bit, you can grate some pumpkin and put it in with the mixture. Very tasty!

You can ignore the meat part, unless you are cooking meat.

Method

In a large bowl, using small amounts of ground meat roll equal sized balls about 1 inch each in diameter and place on an ungreased tray suitable for your Halogen oven.

Put flours, baking powder, breadcrumbs, chives and poppy seed into a second bowl. In a separate bowl beat egg with milk and add to flour mixture to make a dough. Add more milk if dough too dry.

Place tray with meat in Halogen oven at 180°C/356°F. After 5 minutes, carefully drop dough mixture over meat for last 15-20 mins of meat cooking time.

Cover with foil and cook for last 10 mins of meat cooking time. Remove foil and cook for a further 5 mins to brown.

Serve and enjoy!

Eves’ Pudding

Ingredients
20 x 28 cm oven dish
2 – 3 apples
squeeze lemon
tablespoon caster sugar
tablespoon water
knob butter
50gm Butter
50gm caster sugar
1 egg beaten
50gm self-raising flour
Cuisine: Cooking time: 15 mins Serving: 2 people

For two but all easy to increase

cook apples in middle oven for 10 mins stir regular till lightly coloured & nearly cooked

Cream Sugar & butter add egg stir quickly. Fold flour lightly don’t over work. Plop dough on fruit (don’t worry if fruit not fully covered) Cook @ 170 – 175 c for 40 mins or until skewer comes out clean leave to cool serve with custard, cream, ice cream or just plain

Halogen Oven Bread Recipe!

Ingredients
15 g (1/2 oz) fresh yeast
250 – 300 ml (9 – 10 fl oz) tepid milk
1 tsp caster sugar
450 g (1 lb) strong plain flour
1 tsp salt
50 g (2 oz) butter
Cuisine: Cooking time: 90 mins Serving: 4 people

Method

Crusty bread rolls Halogen recipe

1. Blend the yeast with 150 ml (5 fl oz) of the milk and sugar. Sift flour and salt, add butter, and rub into flour.

2. Stir in yeast mixture and sufficient milk to make fairly soft dough.

3. Turn out onto a floured surface and knead thoroughly for 10 mins until dough is firm, elastic and no longer sticky. Place in a large bowl, cover with a clean tea towel and leave to rise in a warm place until doubled in size (1 – 2 hrs).

4. Turn out onto a lightly floured surface and knead well for 2 – 3 mins. Divide into 12 equal pieces and shape into rolls.

5. Place the rolls on greased baking sheets (can just cover the rack with foil – shiny side up), spacing them well apart. Cover with tea towel and leave to prove until doubled in size. Cut slits in the top of each roll.

6. Bake for 30 mins at 225°C (437°F) on lower rack in Halogen Oven and keep watch on them until well risen and golden. If they brown too quickly, turn temperature down to 210°C (410°F) and bake for the rest of the time. Check they are not soft underneath, if so bake for 5 – 10 mins more.

Serve and enjoy. They’re delicious with butter, jam or a spread of your choosing, or accompanying soup, etc.
