Banana Bread : Halogen Oven Recipes

Ingredients
2 large ripe bananas mashed
100g softened butter
75g light Muscovado sugar
100ml maple syrup
1 egg beaten
150ml Greek yoghurt
250g self raising flour
1 tsp baking powder
icing sugar to dust
Cuisine: Cooking time: 15 mins Serving: 2 people

Tasty cake! A must try if you have bananas on the verge of dying!

Method

Grease large bread tin (making sure it fits oven).
Beat butter, sugar and syrup together with electric whisk until pale & creamy. Stir in egg, yoghurt and banana until evenly combined. Sift flour and baking powder into bowl mix in through. Turn into tin and place on low rack. Cover with tin foil.

Set temperature of halogen oven @ 200C/392F and cook for 35 mins. Lift foil cook further 15 mins till brown firm to touch and skewer comes out clean. Leave to stand for 10 mins turn out and cool. Hope you enjoy this!!!!

For Pecan cake Mmke cake mixture stir in 2oz pecan nuts and 1 tsp mixed spice with yoghurt and banana. While cooking beat 100g softened butter in bowl with 75ml maple syrup and 50g icing sugar until combined. Chill till cake cooled then spread over top scatter extra nuts.

Parmesan Chicken : Halogen Oven Recipes

Ingredients
2-4 skinless chicken breasts
1 heaped tablespoon of mayo per breast
57g/2 oz grated Parmesan cheese
Cuisine: Cooking time: 40 mins Serving: 2-4 people

Method

Preheat the halogen oven at 250°C (482°F). Place the chicken breasts in an ovenproof dish. Next cover with the mayonnaise and sprinkle the Parmesan on top.

Place the dish on the low rack and cook for 35 – 40 minutes. Keep an eye on the chicken to see when they are done.

This goes well with chips and salad.

Chicken and Cheese Bacon Melts

Ingredients
2 chicken breast fillets
Barbecue sauce or sauce of your choice
Grated cheese
4 smoked bacon rashers
Cuisine: Cooking time: 30 mins Serving: 2 people

Method

Wash and pat dry chicken fillets on kitchen roll.
Add a sprinkle of salt and pepper. Spread some barbecue sauce onto chicken.
Add grated cheese.
Now wrap the bacon rashers around so that chicken is totally enveloped.

Cook on low rack for 30 minutes at 200°C (392°F). Turn over halfway through to brown both sides.

Best served with baked jacket potatoes

Halogen Oven Bread Recipe!

Ingredients
15 g (1/2 oz) fresh yeast
250 – 300 ml (9 – 10 fl oz) tepid milk
1 tsp caster sugar
450 g (1 lb) strong plain flour
1 tsp salt
50 g (2 oz) butter

Method

Crusty bread rolls Halogen recipe

1. Blend the yeast with 150 ml (5 fl oz) of the milk and sugar. Sift flour and salt, add butter, and rub into flour.

2. Stir in yeast mixture and sufficient milk to make fairly soft dough.

3. Turn out onto a floured surface and knead thoroughly for 10 mins until dough is firm, elastic and no longer sticky. Place in a large bowl, cover with a clean tea towel and leave to rise in a warm place until doubled in size (1 – 2 hrs).

4. Turn out onto a lightly floured surface and knead well for 2 – 3 mins. Divide into 12 equal pieces and shape into rolls.

5. Place the rolls on greased baking sheets (can just cover the rack with foil – shiny side up), spacing them well apart. Cover with tea towel and leave to prove until doubled in size. Cut slits in the top of each roll.

6. Bake for 30 mins at 225°C (437°F) on lower rack in Halogen Oven and keep watch on them until well risen and golden. If they brown too quickly, turn temperature down to 210°C (410°F) and bake for the rest of the time. Check they are not soft underneath, if so bake for 5 – 10 mins more.

Serve and enjoy. They’re delicious with butter, jam or a spread of your choosing, or accompanying soup, etc.

Easy Vegetable Soup with a Difference

Ingredients
1 tbsp of either butter or olive oil
1 leek
1 large potato
1 stick of celery
2 large carrots
1 garlic clove (crushed)

1 tbsp parsley (fresh) or 1/2 that amount (if dried)
1 ½ pts/852ml of chicken stock (or water and stock cubes)
1 tsp curry powder (secret ingredient)
Seasoning
Cuisine: Cooking time: 50 mins Serving: 4 people

Here’s a tasty vegetable soup recipe for your halogen oven. Please note: this recipe requires cooking on a hob at the start.

Method

Roughly chop up all the vegetables, keeping the chopped leek separate…

On the hob heat the oil/butter in a casserole dish that fits in your halogen oven and then gently fry the leek for 3 or 4 minutes. Once it is starting to soften, add the rest of the vegetables.

Preheat the halogen oven to 220°C (425°F) and place the dish on the high rack, cooking for 5-8 minutes, stirring occasionally to prevent any burning.

Add the water or stock and curry powder, cover with a lid or secured double-tin foil, bring to the boil and then simmer at 200°C (392°F) for 30-40 minutes until everything is cooked and soft.

Let the soup cool a little and then liquidise with a hand blender or liquidiser. At this point, taste the soup and then add salt & pepper to your taste.

If the soup is too thick, thin it down with either a little more stock or milk.

If it is too thin, add a little instant potato until you are happy with it.

Serve with crusty bread or a naan.

Asian Ginger Beef : Halogen Oven Recipes

Ingredients
3 tbsp wok oil
625g/1lb 6oz lean braising steak cut into small chunks
2 celery sticks
2 red peppers cored and chopped into chunks
415ml/14.5 uk fl oz hot beef or veg stock from cube
1 tbsp dark soy sauce
3cm fresh ginger grated
½ tsp dried red chilli
1 tbsp cornflour
2 tbsp water
200g/7oz sugar snap peas halved length ways
½ bunch spring onion
Cuisine: Cooking time: 50 mins Serving: 6 people

Method

Please note: this recipe requires cooking on a hob at the start.
Prep time 25 mins
Cook time 1hr 10 mins
Preheat halogen oven to 200°C (392°F).

Heat 2 tbsp oil in large frying pan on hob. Fry beef until lightly browned. Transfer meat to casserole dish.

Add remaining oil to pan, fry celery and peppers until beginning to soften then add to meat in dish.

Pour over stock, add soy sauce, ginger and chillies to dish, stir gently then cover with foil and place on low rack in the halogen oven. Cook for 50 mins or until beef is tender.

Blend cornflour with water. Stir into beef, add snap peas and spring onion. Cover again with the foil and cook for a further 10 mins. Serve with Thai rice.

Roasted Vegetable Ratatouille

2 red peppers, cut into thick wedges
2 red onions, cut into wedges
4-5 cloves garlic, halved
8-10 tomatoes, scored but left whole
1 small aubergine, cut into thick wedges
2 courgettes, cut into lengthways wedges
Olive oil
Balsamic vinegar
Sea salt
Sugar
Fresh thyme and rosemary sprigs
1 jar passata

Method

In your ovenproof dish, combine all the vegetables. Pour over a drizzle of olive oil, a dash of balsamic and a sprinkle of sea salt and sugar. Add the herb sprigs and toss again to ensure it is all evenly coated.

Place on the high rack and cook at 200°C (392°F) for 20 minutes.

Add the passata and combine well. Season with black pepper. Place back in the oven and cook for another 10 minutes.

Serve with crusty bread. For added yumminess, add some cubed feta cheese before serving.

Chocolate and Raspberry Delight

Ingredients
2 medium eggs
115g/4 oz caster sugar
25g/1 oz butter, melted
125g/4½ oz dark chocolate with about 70% cocoa solids, melted
2 tbsp milk
25g/1 oz plain flour
1 tbsp cocoa powder
2 tbsp icing sugar
350g/12 oz raspberries

Method

A dense, dark rich chocolate cake or torte made with very little flour. You will need a greased base-lined 18cm/7 inch cake tin which fits in your oven.

1. Remove the lid from the halogen oven, place the low rack inside the oven and replace the lid. Preheat the halogen oven to 180°C (356°F).

2. Separate the eggs, putting the yolks into a mixing bowl and the whites into a grease-free bowl.

3. Pour the sugar over the egg yolks and whisk until light and fluffy. Stir in the butter, chocolate and the milk.

4. Sieve the flour and cocoa into the bowl and gently stir until mixed.

5. Whisk the egg whites until like soft peaks and with a metal spoon carefully fold into the chocolate mixture. Spoon the mixture into the cake tin.

6. Put into the hot oven and cook for 20-25 minutes until cooked through. Serve warm or cold.

7. Sieve the icing sugar into a small bowl and then press half of the raspberries through the sieve. Mix to a smooth purée.

8. Serve slices of the chocolate cake dusted with icing sugar, drizzled with purée and top each portion with whole raspberries.

Spanish Tortilla

1 large potato, peeled and cut into small cubes
½ onion, sliced
1 tbsp butter
1 tbsp olive oil
4 medium eggs
1 tbsp milk
1 tbsp water
salt and freshly ground black pepper

Here’s a tasty halogen recipe from Paul Brodel & Carol Beckerman.

Method

This is a basic Spanish tortilla, but feel free to add some different ingredients, such as peas, chopped red pepper, ham, chorizo, fresh tomato or cheese.

In a medium saucepan, boil the cubed potato for 6 minutes in boiling water, then drain and set aside.

Place a cup of boiling water into the base/glass bowl of the halogen oven. This helps to slow down the browning process.

Place the sliced onion on the round oven tray with the butter and oil.

Cook on the low rack in the halogen oven at 260°C (500°F) for 6 minutes. Add the potatoes, mix well and cook for 5 minutes more.

In a small bowl, mix the eggs with the milk, water, salt and pepper. Pour the egg mixture over the potatoes. Lower the heat in the halogen oven to 150°C (300°F) and cook for 12 minutes. Slice and serve hot or cold.
