Classic English Fruit Cake

Try this beautiful cake recipe in your halogen oven and let us now what you think!

You won’t be disappointed!

Ingredients (serves 10):
170g unsalted butter
170g light brown sugar

4 medium sized eggs
100ml apple juice
170g sultanas
170g raisins
170g currants
250g plain flour
55g ground almonds
2 x 15ml tablespoons black treacle
1 x 5ml teaspoon mixed spice
½ x 5ml teaspoon grated nutmeg
½ x 5ml teaspoon freshly ground cinnamon
1 x 15ml table spoon bicarbonate of soda
55g toasted flaked almonds, chopped
255g mixed dried fruit, chopped
30g glacé cherries, halved
2 – 3 x 15ml tablespoons sherry

Method:
1. Pre-heat the Halogen Oven to 140ºC (290ºF).
2. Whisk the butter and sugar together until light and fluffy.
3. Beat the eggs & add to the butter, a little at a time, beating well between each addition
4. Stir in the treacle.
5. Sift the flour and dry ingredients together, add the fruit and stir into the butter mixture. Stir in the sherry and add just enough apple juice to moisten.
6. Turn the mixture into a deep, 25cm (9 inch) prepared cake tin (ideally a ring shaped tin) and bake in the Halogen Oven for 45 minutes – 1 hour. (low to medium rack)
If cooked, a skewer will come out clean, when inserted into the middle of the cake
7. Leave to cool in the tin for 15 minutes before lifting onto a wire rack to cool.

Chicken And Cheese Bacon Melts

2 Chicken breast fillets
Barbecue sauce or sauce of your choice
Grated cheese
4 Smoked bacon rashers
Wash and pat dry chicken fillets on kitchen roll
Add a sprinkle of salt and pepper. Spread some barbecue sauce onto chicken
Add grated cheese
Now wrap the bacon rashers around so that chicken is totally enveloped

Cook on a lower rack for 30 mins @ 200c. Turn over 1/2 way through to brown both sides

Best served with baked jacket potatoes

Baked Jacket Potato

4 baking potatoes

Wash them and pierce several times all over with a fork or eating knife. Rub in a tiny amount of olive oil.

Pre-heat oven to 200C/400F
Place potatoes on rack
Cook for 40/45 minutes

    The fruit cake recipe is wonderful. However the timing in a halogen oven are completely rubbish. I am new to this oven and followed the directions exactly. After an hour the cake was completely raw in the middle. I cooked it dor another 30 minutes. Took it out and it collapsed in a raw heap on the worktop! Then I turned up the temperature, scooped it back in the tin, and cooked it for another 30minutes. VEry tasty recipe.

    Thanks for the tip about the fruit cake. What was the eventual temperature used? I have just purchased my hallogen oven and was thinking about trying to make a fruit cake so your comment is extremely helpful especially as fruit cakes tend to be quite expensive to bake.

Use all you normal dressing/Seasonings

Roast Potatoes

I Par boil mine then roast for 1hr @ 200c on the low rack just brush with a little olive oil to help with browning…..

Pork Chops

Cook at 200c on High rack for 20 mins… TURN CHOPS AFTER 10MINS
continue cooking for the 10 mins check meat is hot & cooked serve and enjoy…

    I have tried pork chop in the halogen and they never seem cooked. Theyb have been in there for a lot longer than 20mins….and no they are not over cooked.

    It depends how big your chops are, you need to warm up the oven first.

    I always dust in flour then fry my chops off before I put them in the halogen cooker and I put round them – skin side up, oiled, salted and halved potatoes that I have microwaved first of all. I agree with the original poster 20 minutes would just not cook them!

    What’s the point if I gotta cook things before putting them in the oven? I got my halogen oven as a gift from my daughter & as yet have only tried it once but am dissappointed with the lack of information available, I wanted to roast potatoes & grill the chops but do I need to put these items in dishes or on the grids? I can grill the chops normally in less than 20mins even fat ones I thought this was quicker

    It depends on your oven, It uses less energy that a normal cooker. You can roast the potatoes , but i prefer to part boil then first. Up to you,

    Have just used my new oven once for a roast Duck and did the potatoes halved on the top rack with the duck near the end , they took about 20 mins on 220 turning them as they cook quickly they were delicious. I did spray them with 1 cal oil first.

Meringue Recipe

2oz Granulated Sugar
2 Egg Whites (large Fresh Eggs) room temperature
2oz Caster Sugar

Cut a round piece of baking parchment to fit the bottom of your Halogen Oven

Whisk egg whites with a mixer till it forms soft peaks.
Gradually add sugar a bit at a time till peaks return and mixture is shiny and glossy.

Place large spoonfuls (approx 6) on the baking parchment.
Cook on low heat setting (1) for 1 hour.

Meringues will be lovely and white and won’t need drying out as they do with a conventional oven.
You can lift them right away and make next batch.

When meringues are complete, whip up double or whipping cream and place large amount between two meringue shells and place in muffin paper case.
Enjoy!

    No, no, no!!! Meringues should be gorgeously chewy on the inside and crunchy melt in the mouth on the outside, the halogen didn’t deliver, thestrawberries and cream just hid the disaster!! For meat, the halogen delivers everytime but meringue? No, I’m going back to my reliable gas stove!!

    Just tried this receipt and it turned out wonderful am so happy! Have tried to make meringue many times before and always a flop this was my first try in my halogen oven and I am so impressed.

    Have I missed the vital information I can not find a temperature . I hope they come out dry and crisp ,I dont like them chewy, like a pavlova!

    If you want them crispy add a teaspoon of vinegar to the mix. :)

Spicy vegetarian kebabs in your halogen oven!

3 tbsp tikka paste
500g tub yogurt
2 tsp cumin seeds
thumb-size piece fresh root ginger , finely grated
250g small new potatoes
300g paneer cheese, cut into chunks
3 red onions , wedges
2 red peppers , cut into chunks
5 tbsp mango chutney
small pack mint leaves, leaves picked
250g bag salad leaves
12 chapattis

* Soak 12 wooden skewers in water for 30 mins (stop them burning).
* Mix together the tikka paste, half of the yogurt, the cumin, ginger and seasoning together.
* Boil the potatoes in a pan of boiling salted water for 7 mins, then drain well and tip into the tikka mixture with the paneer.
* Mix into the marinade, and chill for at least a couple of hours.
* Next alternately thread the marinated potatoes and paneer onto the skewers with the onions and peppers, then cover on a tray until you are ready to cook.
Grill the kebabs on HI in your Halogen Oven for 8-10 mins, turning, until the veg are charred and softened. With a few minutes to go, add the chapattis to warm through.
* Serve the kebabs with the minty salad, cooling mango yogurt and chapattis.

Mozzarella Chicken

Ingredients

1 Chicken breast
1 teaspoon Pesto
Mozzarella cheese

Instructions

1. Flatten the chicken breast out (put it in a plastic bag and hit it a few times with a rolling pin).

2. Next place into the Halogen Oven on to the lower rack and cook on HI for 18 minutes (may need to cover in foil so that top doesn’t burn).

3. Spread some pesto on the top, and put sliced mozzarella on top of that.

4. Put back into your Halogen Oven and watch until cheese is melted.

5. Serve with jacket potato (45-50 minutes in your Halogen Oven!) and some of your favourite veg.

Brussels Sprouts with your Halogen Oven

Ingredients

1.5kg Sprouts
284ml double cream
150g parmesan

Instructions

  1. Bring a pan of unsalted water to the boil, Remove all the leaves from the outside of the sprouts and place them in the water, lid on, turn down the heat and cook until parboiled – about 4-6 minutes.
  2. Drain, then tip into the food processor, along with the cream, salt and pepper. Blend for 20 seconds or so – they should be roughly chopped up, not a smooth purée.
  3. Stir all the parmesan into the sprout mash except for enough to sprinkle over the top, then transfer to an ovenproof dish.
  4. Sprinkle the left over parmesan on top and bake for 8-10 minutes on HI until the top has developed a fine, crunchy crust.

Halogen Oven recipes for Diabetics

CHICKEN BREASTS WITH CARROT AND COURGETTE STUFFING

Ingredients

2 small (whole) skinless, boneless chicken breasts
225g. carrots, shredded (about 2 small.)
225g. courgette, shredded (about 1 med.)
1 tsp. salt
1/4 tsp. poultry seasoning
1 sachet chicken-flavoured bouillon
70ml. water

Instructions

1. In medium bowl, combine carrots, courgette, salt and poultry seasoning.
2. Spoon about mixture into each pocket (each breast should open similar to a butterfly); secure with toothpicks.
3. Then place chicken in a medium size oven dish and sprinkle with bouillon.
4. Add water and cook over medium high heat, heat to boiling.
5. Then cover with foil and cook on full power for about 20 minutes or until chicken is tender.
6. Remove toothpicks.
