Ingredients
1 orange
1 lemon
175g/6 oz self-raising flour
1 tsp baking powder
2 medium eggs
60g/2 ¼ oz ground almonds
125g/4 ½ oz golden caster sugar
125g/4 ½ oz soft butter
100g/3 ½ oz icing sugar

Here’s a delicious halogen oven recipe from Norma Miller.

Method

A well-known traditional cake to which I’ve added ground almonds. Bite into a slice and taste the intense citrus flavours of the sweet glaze which is poured over the hot cake. You will need a greased and base-lined 18cm/7 inch deep cake tin (square or round) which fits in your oven.

1.Remove the lid from the halogen oven, place the low rack inside the oven and replace the lid. Preheat the oven to 180°C (356°F).

2.Finely grate the rind from half the orange and half the lemon, cut both in half and squeeze the juice from the whole fruits (you will need about 6 tbsp). Mix the juices together in a small basin.

3.Sift the flour and baking powder into a large bowl. Break the eggs into the flour and add the ground almonds, sugar, butter, orange and lemon rinds and 3 tbsp fruit juice.

4.With a wooden spoon or mixer, lightly beat the ingredients together until thoroughly mixed, light and fluffy. Spoon into the prepared tin and level the surface.

5.Put into the hot oven and cook for 20-25 minutes until risen, firm to the touch and cooked through.

6.Whilst the cake is cooking, make the drizzle mixture. Sieve the icing sugar into a bowl, pour in the remaining 3 tbsp fruit juices and mix to a smooth paste.

7.Turn the cake onto a wire rack and whilst still hot use a fine skewer to make several holes in the top of the cake. Spoon the drizzle mixture over the top of the cake and leave to cool.

Spiced Seafood with Rice Noodles : Halogen Oven Recipes

Ingredients
300g/10 ½ oz mixed, shelled shellfish, no need to thaw if frozen
2 tbsp wholegrain mustard
2 tsp Worcestershire sauce
Small pinch of cayenne pepper
300ml/1/2 pint fish or vegetable stock
1 tbsp olive oil
1 tbsp chopped parsley
Freshly milled black pepper
100g/3 ½ oz rice noodles

Method

The addition of rice noodles makes a complete meal. Bags of frozen seafood are a useful standby, as is a range of spices. You will need a large ovenproof dish which fits in your oven.

1.Remove the lid from the halogen oven, place the low rack inside the oven and replace the lid. Preheat the halogen oven to 200°C (392°F). Put the kettle on to boil.

2.Put the shellfish into the dish and stir in the wholegrain mustard, Worcestershire sauce, cayenne pepper, fish or vegetable stock, olive oil, chopped parsley and a little black pepper.

3.Cover, and put into the hot oven. Cook for 15-18 minutes until just cooked.

4.Put the noodles into a large bowl, pour over boiling water from the kettle to cover and stand for 10 minutes. Drain well and stir into the cooked seafood. Cover and cook for 4-6 minutes until piping hot.

Sweet and sour cod : Halogen Oven Recipes

Ingredients
2 skinless cod fillets
2 Tbsp tomato sauce
1/2 green pepper
1 tbsp mango chutney
1 tbsp vinegar
1 Tbsp sugar
225 tinned pineapple in juice
1/2 onion cubes
1 tbsp oil
1 tbsp cornflower

This is very tasty recipes guys, You MUST try it. You can also do it with chicken or beef. Sauce is lovely too.

Method

1. Place cod & oil on round oven tray and season, put in halogen oven on high rack 240c for 6 minutes turning once.
2. In a bowl add tomato sauce, sugar,mango chutney, vinegar, pineapple, green pepper, onion & cornflower (pre- mixed with a little cold water).
3 Mix well then pour over the cod and cook for a further 10 minutes stirring twice.

Toad in the Hole : Halogen Oven Recipes

Ingredients
2 eggs
8 good quality pork sausages
125g/4.5 oz plain flour
½ tsp salt
3 tbsp vegetable cooking oil
200ml/0.66 uk pint milk
Cuisine: Cooking time: 40 mins Serving: 4 people

Here’s a halogen recipe for this famous dish.

Method

Put the flour and salt in a big bowl, make a well in the centre, now add the eggs.

Pour in half of the milk, mix in well until it’s smooth – add the rest of the milk, whisk well until you see tiny bubbles. Leave it to rest a while.

On the low rack of the Halogen Oven place a small roasting tin with oil and sausages in it. Cook at 200°C (392°F) for around 10 minutes or until sausages turn brown.

Next pour the batter over the sausages (the oil in the roasting tin must be very hot when you do that) and cook at 200°C (392°F) for about 30 to 40 minutes or until the batter has risen and is golden brown.

Toad in the Hole complete. Serve with onion gravy and green peas if you wish.

Syrup Sponge Pudding

Ingredients
Prep time 15 mins cooking tome 1 hr30mins
Butter for greasing
75 ml (3fl oz) golden syrup
175g (6oz) self raising flour
75g (3oz) suet
50g (2oz) caster sugar
1 beaten egg
100ml (3.5floz) milk
Cuisine: Cooking time: 50 mins Serving: / people

Mix ingredients together until thoroughly combined spoon mixture into basin 1lt size.

Cover bowl with double layer baking parchment secur with string. Cover this with tin foil. Set basin in halogen bowl pour enough boiling water to come to a third of the way up pudding basin side

Set oven to 250c and steam for 1hr30 to 1hr 45 min or until just firm to touch and knife inserted to middle comes out clean. Leave in basin for 5 mins then invert on to serving plate.

This book is great, it has a good mixture of recipes from boiling to baking to roasting. It has over 80 luxurious recipes such as Spanish stuffed chicken and Halibut with tomatoes and basil. It’s fantastic for new Halogen Oven users or advanced! Also packed with beautiful photography. See more here!


The second cook book is The Halogen Handbook
Again this is another fantastic cookbook. It has a wide variety of recipes, with simple instructions and timings. It’s great for a beginner. It has 51 pages packed with recipes and beautiful photography. And at £4.99 it is a bargain! See more here!

Baked crumb-topped Cod

Ingredients
4 x 150g (5.3 oz) skinless firm white cod steaks
1 beef steak tomato
1 medium leek
4 tbsp stuffing mix
100g (3.5 oz) grated mature Cheddar cheese
Cuisine: Cooking time: 25 mins Serving: 4 people

Method

1. Pre-heat the Halogen Oven to 200ºC (400ºF).

2. Wash and pat dry the fish steaks and place on a baking sheet lined with baking paper.

3. Thinly slice the tomato. Trim and shred the leek. Arrange the sliced tomato over the fish

so they overlap and then pile on the leek.

4. Sprinkle over the stuffing mix, and top with the cheese.

5. Bake in the Halogen Oven for 10 – 15 minutes or until tender and cooked through.

Boulangere Potatoes

Chicken with Spicy Lentils

Ingredients
8 large skin & boneless chicken thighs
1 tsp cumin seed
1tsp coriander seed
3tbsp olive oil
2 Garlic cloves crushed
2 Red onions thinly sliced
100g (3.5oz) Green lentils rinsed
400g (13oz) Can Chopped Toms
2 tbsp Sundried tom paste
1 tbsp light Muscovado sugar
300ml (0.5pint) Chicken stock
Salt & Pepper
Cuisine: Cooking time: 70 mins Serving: 4 people

Another tasty meal. A must try. Its also very healthy.

Season chicken with salt pepper.Crush cumin + coriander seeds in mortar and pestle

Heat oil in frying pan on hob gently fry chicken for 5 mins, stirring, until beginning to colour. Stir in garlic, onion and crushed spices.

Turn into casserole dish add lentils. Put tomatoes, tomato paste, sugar and stock into frying pan bring to boil pour over chicken lentils. Mix ingredients together to combine season with salt+pepper. Cover dish with foil place on low rack.

Set oven at 200c and cook for 40 mins until chicken is cooked through. Serve with rice, couscous or flat breads and roasted tomato salad

Chocolate & Vanilla Cake

7 oz Utterly butterly
7 oz Caster Sugar
7 oz SR Flour
3 TBSP cocoa powder ( mixed in warm water to make runny paste)
3-4 Eggs (weigh eggs so they are same weight as dry ingredients, 7oz)

Preheat Halogen Oven to 180 deg C
