Halogen Oven recipes for Diabetics

CHICKEN BREASTS WITH CARROT AND COURGETTE STUFFING

Ingredients

2 small (whole) skinless, boneless chicken breasts
225g. carrots, shredded (about 2 small.)
225g. courgette, shredded (about 1 med.)
1 tsp. salt
1/4 tsp. poultry seasoning
1 sachet chicken-flavoured bouillon
70ml. water

Instructions

1. In medium bowl, combine carrots, courgette, salt and poultry seasoning.
2. Spoon about mixture into each pocket (each breast should open similar to a butterfly); secure with toothpicks.
3. Then place chicken in a medium size oven dish and sprinkle with bouillon.
4. Add water and cook over medium high heat, heat to boiling.
5. Then cover with foil and cook on full power for about 20 minutes or until chicken is tender.
6. Remove toothpicks.

Roast Turkey Crown with lemon and thyme

Roast Turkey with lemon and thyme

Ingredients
4 – 4 ½ kg turkey crown
1 bulb garlic, cut in half
1 lemon, cut in half small bunch of thyme
2 bay leaves

2 tbsp olive oil
Salt and freshly ground black pepper

Method
Remove and discard giblets and excess fat, wash turkey under cold water and pat dry.

Place the garlic, lemon, thyme and bay leaves inside the cavity of the bird and rub the skin with the olive oil, season the skin with cavity well with salt and freshly ground black pepper

Set temperature to 220°C and put the turkey onto the low wire rack.

Cook for one hour, using the tongs turn the bird so that the other end of the breast is uppermost.

Turn the temperature down to 170 °C and cook for a further 30 to 45 minutes or until the juices run clear when you insert a skewer into the base of the breast.

When cooked, removed the turkey from the Halogen Oven onto a warm plate. Cover the turkey in foil and leave to rest for 10 to 15 minutes

    Thanks for telling me how to cook turkey crown in halogen oven as never cooked one before so was unsure of times and temps.
    This is my second Halogen oven. Had one perhaps about 20-25 years ago,loved it but unfotunately after about 5 years use, broke the glass lid and was never able to replace as they had gone off the market. I think microwaves had just come in then. Merry Christmas.

    A bit confused,a turkey crown does not have giblets or a cavity however I will try the recipe and see how it comes out

    Hi Mike, Glad you’re confused ! I thought I was the only one! Why are these recipes so wierd.? maybe we should write a recipe book thats less confusing and actually delivers a recipe that has been tried and tested, rather than one thats simply in the ballpark !!!
