Pork Chops and Roast Potatoes : Halogen Oven Recipes

Pork chops (maximum of 4 to fit on the rack)
750g (26oz) red or white skinned small potatoes

Here’s a tasty halogen oven recipe for pork chops with roast potatoes. Please note: this recipe requires cooking on a hob at the start.

Use all your normal dressing/Seasonings

Method

Roast potatoes
Parboil then roast for 1hr at 200°C (392°F) on the low rack – just brush with a little olive oil to help with browning…..

Pork chops
Cook at 200°C (392°F) on high rack for 20 mins. Turn chops after 10 mins. Continue cooking for the 10 mins; check meat is cooked through.

Serve with green beans or asparagus.

Bourbon and Maple Chicken

1 chicken, cut into 8 pieces, and skinned
160 ml (6 fl oz) red wine
4 tbsp soy sauce
2 tbsp red wine vinegar
1 tbsp tomato purée
2 tbsp maple syrup
2 tbsp bourbon
1 tsp ground ginger
1 tsp mustard powder
2 cloves garlic, crushed
Watercress, to serve

Method

The intense heat from the halogen lamp lends an amazing flavour to this dish, caramelising the sugar in the sauce and making it irresistible.

Place the chicken on the round oven tray and cook on the high rack of the halogen oven at 220°C (425°F) for 15 minutes, turning the chicken over halfway through cooking time.

In a medium bowl, whisk together the red wine, soy sauce, vinegar, tomato purée, maple syrup, bourbon, ginger, mustard powder and garlic, until well combined.

Spoon half the sauce over the chicken and cook for 5 minutes at 220°C (425°F).

Then lower the heat to 190°C (375°F) and cook for another 5 minutes, then turn the chicken over and spoon on the remaining sauce.

Cook for 5 minutes more, then transfer the chicken to a serving plate and keep warm in a low oven.

Pour the sauce from the oven tray into a small saucepan, place over medium heat and bring to the boil.

Simmer for 5-8 minutes, until the sauce has reduced in volume. Serve the chicken immediately, with the sauce poured on top, and garnished with watercress.

This dish goes well with basmati rice with added chopped red pepper and a small finely chopped onion, and garnished with freshly chopped spring onions.

If you would rather not use alcohol in this dish, substitute good-quality chicken stock for the red wine and omit the bourbon.

Roast Leg of Lamb with Roasted Vegetables

Ingredients
3-4 cloves garlic, crushed
½ teaspoon chopped chillies
1 teaspoon dried rosemary
Seasoning
2-3 tablespoons olive oil
1 leg of lamb
2 sweet potatoes
6-8 potatoes
2-3 teaspoons paprika
2-3 teaspoons semolina
Olive oil spray
2 red onions
2-3 sprigs of rosemary

Method

Mix together the garlic, chilli, rosemary, seasoning and olive oil to form a paste. Rub this over the leg of lamb. You can score the flesh first to help give the paste something to hold on to.

Place on the lower rack and cook for 15 minutes at 230°C (446°F).

Meanwhile, cut the potatoes to size and steam or parboil for 10 minutes. Drain and return to the empty saucepan. Add the paprika and semolina. Pop the lid back on the saucepan and shake to fluff up and coat the vegetables.

Place the potatoes around the lamb. Spray with olive oil. Halve the onions and place them with the vegetables, along with the rosemary sprigs.

Cook for another 10 minutes before turning down to 190°C (374°F) and cooking for 30 – 45 minutes or until both the meat and potatoes are cooked to your satisfaction.

The cooking time for lamb depends on the size of the joint. Remember to turn the lamb and vegetables regularly and add a spray of oil or paste as required.

Serve with homemade gravy.

Salmon and Macaroni Bake halogen oven recipe

225g/8 oz skinless salmon pieces
3 tomatoes
Small handful of fresh fennel leaves
1 lemon
2 tbsp fish or vegetable stock
Freshly milled salt and black pepper
100g/3 ½ oz macaroni pasta
150ml/ ¼ pint low-fat crème fraîche
2 tbsp milk
50g/1 ¾ oz grated Cheddar cheese

Method

Macaroni cheese with a twist. Use any type of short pasta tubes to make this tasty dish. You will need an ovenproof dish which fits in your oven.

1.Preheat the halogen oven to 200°C (392°F).

2. Cut the salmon into bite-sized pieces, removing any bones. Thinly slice the tomatoes and chop the fennel leaves. Squeeze the juice from the lemon.

3. Arrange the tomato slices over the base of the dish and scatter over the salmon pieces. Sprinkle over the chopped fennel, pour over the lemon juice and stock and add a little seasoning. Cover with foil.

4. Put the dish into the hot oven and cook for 12-15 minutes until the salmon is almost cooked.

5. Cook the macaroni according to the packet instructions and drain.

6. Put the hot macaroni into a bowl and stir in the crème fraîche, milk and seasoning.

7. Remove the lid from the oven and lift out the dish. Replace the lid, and set the timer for 20 minutes.

8. Quickly spoon the creamy macaroni over the salmon and sprinkle over the grated Cheddar cheese. Put back into the hot oven and cook for 10-15 minutes until piping hot and cooked through.

Toad in the Hole : Halogen Oven Recipes

Ingredients
2 eggs
8 good quality pork sausages
125g/4.5 oz plain flour
½ tsp salt
3 tbsp vegetable cooking oil
200ml/0.66 uk pint milk
Cuisine: Cooking time: 40 mins Serving: 4 people

Here’s a halogen recipe for this famous dish.

Method

Put the flour and salt in a big bowl, make a well in the centre, now add the eggs.

Pour in half of the milk, mix in well until it’s smooth – add the rest of the milk, whisk well until you see tiny bubbles. Leave it to rest a while.

On the low rack of the Halogen Oven place a small roasting tin with oil and sausages in it. Cook at 200°C (392°F) for around 10 minutes or until sausages turn brown.

Next pour the batter over the sausages (the oil in the roasting tin must be very hot when you do that) and cook at 200°C (392°F) for about 30 to 40 minutes or until the batter has risen and is golden brown.

Toad in the Hole complete. Serve with onion gravy and green peas if you wish.

Croque Monsieur : Halogen Oven Recipes

Ingredients
6 tbsp finely shredded Swiss cheese, such Gruyère
2 tbsp sour cream or crème fraîche
salt and freshly ground black pepper
½ tsp Worcestershire sauce
½ tsp Dijon mustard
4 slices white sandwich bread, buttered
2 thin slices deli ham

Method

The traditional French ham and cheese sandwich is ideal for cooking in the halogen oven. It will be crisp and golden on the outside and succulent on the inside.

In a small bowl, mix the cheese with enough cream or crème fraîche for it to hold together. Add the seasoning, Worcestershire sauce and mustard, and mix until combined.

Place 2 slices of bread butter-side down on the oven tray. Divide the cheese mixture between them, and spread it right to the edges.

Add the deli ham, cutting it to fit, if necessary. Cover with the other 2 slices of bread, butter-side up, to make 2 sandwiches. Press down lightly.

Place the oven tray on the high rack of the halogen oven and cook at 200°C (400°F) for 3-4 minutes. Turn the sandwiches over and cook for 3-4 minutes more, or until golden brown on the outside and melting on the inside.

Another Way

To make a Croque Madame, add a fried egg to the sandwich just before cooking.

Mincemeat and Apple Slice : Halogen Oven Recipes

Ingredients
Topping
6oz (170g) butter
14oz (400g) mincemeat
2.5oz (70g) caster sugar
3 apples sliced

Base
5.5oz (155g) plain flour
1.75oz (50g) melted butter
1tsp baking powder
3 tbsp caster sugar
2 egg yolks
Cuisine: Cooking time: 15 mins Serving: 6 people

Method

Pre-heat oven to 200°C (392°F).

Base
In bowl/processor, mix butter, sugar, flour, eggs and baking powder until mixture sticks together.

Press mixture flat into cake tin and bake on lower rack for 10 mins.

Topping
Spread mincemeat over cooked base, this can be made easier if you heat mincemeat for a few mins in halogen. Not too long about 1 min on lowest setting or just use heat created by cooking base.

Lay sliced apples over the mincemeat, slightly overlapping the slices. Drizzle melted butter over apple and sprinkle sugar before baking for a further 10 mins at 200°C (392°F).

300g/10 ½ oz mixed, shelled shellfish, no need to thaw if frozen
2 tbsp wholegrain mustard
2 tsp Worcestershire sauce
Small pinch of cayenne pepper
300ml/1/2 pint fish or vegetable stock
1 tbsp olive oil
1 tbsp chopped parsley
Freshly milled black pepper
100g/3 ½ oz rice noodles

Method

The addition of rice noodles makes a complete meal. Bags of frozen seafood are a useful standby, as is a range of spices. You will need a large ovenproof dish which fits in your oven.

1.Remove the lid from the halogen oven, place the low rack inside the oven and replace the lid. Preheat the halogen oven to 200°C (392°F). Put the kettle on to boil.

2.Put the shellfish into the dish and stir in the wholegrain mustard, Worcestershire sauce, cayenne pepper, fish or vegetable stock, olive oil, chopped parsley and a little black pepper.

3.Cover, and put into the hot oven. Cook for 15-18 minutes until just cooked.

4.Put the noodles into a large bowl, pour over boiling water from the kettle to cover and stand for 10 minutes. Drain well and stir into the cooked seafood. Cover and cook for 4-6 minutes until piping hot.

Mediterranean-style Roasted Vegetables

2 red onions, quartered
3-4 cloves garlic, roughly chopped
1 aubergine, thickly sliced
2 courgettes, thickly sliced

Method

This is a really easy dish, suitable to eat on its own with the crumbled feta or goat’s cheese, or to use as a pasta sauce/base or even as a pizza topping.

Prepare the vegetables and place into an ovenproof dish, ensuring they are evenly distributed.

Mix the olive oil, balsamic, sugar, oregano and seasoning together. Pour this over the vegetables before tossing well ensuring the vegetables are evenly covered.

Turn on the halogen to 200°C (392°F). Place the ovenproof dish on the low rack and cook for 20-30 minutes until the vegetables are soft.

To serve, sprinkle with fresh Italian herbs and crumbled goat’s cheese or feta.

Roast Turkey Crown with lemon and thyme

Ingredients
4 – 4 ½ kg (9 – 10 lb) turkey crown 1 bulb garlic, cut in half 1 lemon, cut in half small bunch of thyme 2 bay leaves 2 tbsp olive oil salt and freshly ground black pepper
Cuisine: Cooking time: 45 mins Serving: 2 people

Method

Remove and discard giblets and excess fat, wash turkey under cold water and pat dry.

Place the garlic, lemon, thyme and bay leaves inside the cavity of the bird and rub the skin with the olive oil. Season the skin and cavity well with salt and freshly ground black pepper

Set temperature to 220°C (428°F) and put the turkey onto the low wire rack in the halogen oven.

Cook for one hour. Using tongs turn the bird so that the other end of the breast is uppermost.

Turn the temperature down to 170°C (338°F) and cook for a further 30 to 45 minutes or until the juices run clear when you insert a skewer into the base of the breast.

When cooked, remove the turkey from the halogen oven onto a warm plate. Cover the turkey in foil and leave to rest for 10 to 15 minutes.

Serve with roast potatoes, peas and carrots.
