Christmas Cookies

Ingredients

225g butter or margarine
270g brown sugar
113g sugar
3 eggs

450g flour
1-2 teaspoons salt
1 teaspoon baking powder
1 teaspoon cinnamon
1/2 teaspoon nutmeg
1/2 teaspoon ground cloves
225g chopped raisins
115g chopped black walnuts


Instructions

1. Cream butter and sugar; add eggs, beat well.
2. Measure and mix flour, salt, baking powder and spices.
3. Add to first mixture and stir in raisins and nuts.
4. Form into two logs about 1 1/2 to 2 inches in diameter.
5. Place on bread board and refrigerate over night.
6. Slice and sprinkle with sugar and bake on 230C and covered for 10-12 minutes.

Let them cool and enjoy!

Christmas Turkey

Hi guys, this is a recipe for a traditional roast turkey in your halogen oven.

5.5kg turkey
125g butter softened
1 pack sliced pancetta/streaky bacon
200ml water
200ml white wine

1 onion peeled and halved
1 lemon zested then halved
1 orange zested then halved
small bunch of rosemary and thyme

Cooking time – 12-14 minutes per lb

Method:

1. Remove the giblets from inside the turkey.
2. Chop half the rosemary and thyme leaves finely and add to the softened butter along with the orange and lemon zest.
3. Spread butter all over the turkey, season very well then lay the slices of pancetta or bacon over the turkey.
4. Push the remaining herbs, orange and lemon halves and half of the onion into the turkey cavity.
5. Place some roughly chopped veg such as onions or carrots in a large roasting tin (making sure it fits in your oven) for the turkey to sit on.
6. Pour the white wine and water around the turkey.
7. Cover and seal the roasting tin with foil.
8. Cook for the calculated time, in this case 144 – 168 minutes.
9. Removing the foil for the last 10 mins to allow the skin to crisp up.
10. The turkey can now be left covered in a warm place to rest for between 30-45 mins.

You need to place the turkey, breast side down to begin cooking then half way through turn it over and cook the other side

Cooking temperature at 400F
Cooking time – 12-14 mins per lb fresh, not from frozen turkey.

    Wonder if still have that small one from older microwave oven. Maybe will do same job.

    Have you noticed how the price of the jml products have shot up recently. Extra £10 and £20 here and there on many items. Scam stay away from them until they come back own to earth and have more realistic affordable prices again. Tis a shame as i was thinking of buying two for xmas presents. Will look elsewhere to buy than JML direct.

Grilled Prawns

700g of jumbo prawns (cleaned and peeled)
1 1/4 cup of melted butter or margarine
1 garlic clove (peeled and minced)


2 Tablespoons of lemon juice)

Rinse and dry the prawns.
In a small bowl, mix the melted butter with the lemon juice along with the garlic.
Place the elevated wire rack into the oven and set to 220 degree C.
Brush the prawns with the butter mix and arrange directly onto the rack
Grill the prawns for about 8-10 minutes

Serve with rice, enjoy!

Garlic Mushrooms

This is a quick and easy recipe!

You are going to need the following…

Salt and pepper
½ lb of mushrooms. Washed and dried.
65 g of butter. Melted slightly
4 or more cloves of garlic, chopped finely
1½ tablespoon of chopped herbs – Anything will do!


1) Put the ingredients in a bowl and mix.
2) Place them on your halogen oven tray and cook on the high rack,
3) Set the temp to 450 F and cook for about 10 to 12 minutes turning them over half way.

What I like to do is add a fine sprinkling of grated cheese!

Enjoy!

    An excellent recipe and a nice supper time snack along with a crusty roll. I’ve tried it twice already just varying the type of cheese I grated over the cooked mushrooms.

    There’s an infinate variety of cheeses to chose from, you can make it differently every time.

    Hi

    Just bought a Halogen Oven and are a little confused, it does not seem to cook as it promises and I have found that there are cold spots. It has just taken 40-45 minutes to cook some mince which would have taken a lot less on my cooker. I bought the U.K. Supplies Direct. I will go back to the person who sold me it but just wondered if anyone else has had this experience.

    I find if you give the food a stir now and again as you would in a pot on the cooker , it distributes the heat evenly, also if you are doing a big roast or chicken it is best to turn the food now and then to cook it through as you would in a ordinary oven.

    I live in Spain and bought a halogen from my local English supermarket. However after only a couple of months use it started to blow the main fuse in the house. My friends also went wrong as have several othe people where I live. Problem is my friends has been severl months (under repair !!!) Not sure how long I will have to wait for mine. Better to cut your cost and get a convector one they are the same but do not have a halogen bulb!

Eves’ Pudding

For two but all easy to increase

20 x 28 cm oven dish
2 – 3 apples
squeeze lemon

tablespoon caster sugar
tablespoon water
knob butter

cook apples in middle oven for 10 mins stir regular till lightly coloured & nearly cooked
10 – 15 mins

Sponge

50gm Butter
50gm caster sugar
1 egg beaten
50gm self-raising flour

Cream Sugar & butter add egg stir quickly. Fold flour lightly don’t over work. Plop dough on fruit (don’t worry if fruit not fully covered) Cook @ 170 – 175 c for 40 mins or until skewer comes out clean leave to cool serve with custard, cream, ice cream or just plain
