2. Whisk the butter and sugar together until light and fluffy.
3. Beat the eggs & add to the butter, a little at a time, beating well between each addition
4. Stir in the treacle.
5. Sift the flour and dry ingredients together, add the fruit and stir into the butter mixture. Stir in the sherry and add just enough apple juice to moisten.
6. Turn the mixture into a deep, 25cm (9 inch) prepared cake tin (ideally a ring shaped tin) and bake in the Halogen Oven for 45 minutes – 1 hour. (low to medium rack)
If cooked, a skewer will come out clean, when inserted into the middle of the cake
7. Leave to cool in the tin for 15 minutes before lifting onto a wire rack to cool.

just taken the above recipe fruit cake out of the halogen oven, following the instructions word for word, in fact cooking an extra
40 minutes. What a disappointment, a very undercooked cake even with the time added on.
I have cooked various foods with good results, but this time it was a disaster, a costly one.

Very disappointing, followed the recipe closely and had the same experience. Undercooked on the inside.
Had to microwave portions one at a time and use as desserts rather than throw it away because the ingredients cost quite a lot.

Don’t you ever test these recipes before publishing?

Hi Victor, I’m sorry you had this experience. It worked for us though timings can vary depending on the model of halogen oven.
